The Go-To Meal: Stir-Fry

One of the easiest meals in the entire world (and I’m not kidding!) is stir-fry.

Why? Well, you can’t really go wrong (unless you under cook the rice which I’m notorious for). And you can personalize it/switch it up with whatever ingredients you want.

I had some fresh green beans from a coworker [see Always Choose Fresh to read more] and so I combined:

  • 2 cups chopped green beans
  • 1/4 chopped onion
  • 3 tbsp teriyaki sauce (I use the thicker La Choy brand marinade/sauce)
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 lb. chicken breast
  • 1/4 cup chopped broccoli
  • 1 tbsp sesame seeds
  • 1 tbsp minced garlic
  • 2 cups rice

I cook the rice first since it takes the longest and I always seem to mess it up. Then, while that’s cooking, I saute the veggies in olive oil while I saute the chicken in a separate pan with the sauces. When the chicken’s done, I combine the veggies, add more sauce, and then mix the pre-cooked rice in and cook a little longer so it’s a little drier and more stir-fry friendly.

This is a simple, healthy recipe that doesn’t take too long to make from start to finish. If you add a lot of green veggies, it makes it even better for you! But feel free to mix in your own ingredients and tastes.
