I made teriyaki chicken the other night (YUM) and I mastered the art of making hard boiled eggs just the other day (WINNING!) so I thought, why not combine these protein-filled delights into something amazing?!
So I did just that.
The Power Protein Salad:
What you need:
– 3 cups lettuce/spinach (any greens)
– 1/4 cup shaved carrots
– 2 hard boiled eggs, peeled and sliced thin
– 1 chicken breast, cooked (mine was marinated in soy and oil! yum!)
– 1/4 cucumber, sliced thin
– salt and pepper to taste
– 2 tbsp. ginger dressing
This is seriously the easiest, yummiest and healthiest summer treats.
You can get the protein punch you need, without compromising on the flavor!
Sounds like a good way to make use of leftover vegetables and chicken.
