Have you ever eaten something that just made you smile? Like ear-to-ear, full-blown smile? Well that’s how I feel about the Pesto, Egg & Cheese Bagel.
What is it? Well it’s as simple as it sounds. And the prep takes about 6 minutes, so it’s perfect even on busy days.
What you need:
- 2 eggs
- 1 everything bagel
- 1/4 cup cheddar/Mexican cheese blend
- 2 tbsp Pesto sauce
Optional (but yummy!):
- 1/4 onion chopped
- 1/2 green pepper chopped
- 1/4 tbsp salsa (or chopped tomato)
- 1 cup spinach leaves
Start with the onions if you are using them! Saute them in a little butter, then add the remaining veggies, then eggs (scramble them first! I also add a splash of milk to make them creamy!)
When the eggs are almost done, toast your bagel. By the time the eggs are done, the bagel will be done! Spread the bagel with pesto and add cheese to the eggs. When you’re done with the bagel, add the eggs and ta-da! Done!
