Okay, okay. So I know I’ve been posting a lot of salad recipes lately…but in my defense, it’s summer and no one really wants a hot, heavy dish. Right?
The other night I was looking for something sweet. I had that nagging craving for ice cream, chocolate, peanut butter, puppy chow…you know, all things good for your body. Well, I knew I had to eat an actual dinner first, so I switched up my salad to cater to my sweet craving.
Summer Sweet Fruit Salad:
What you need:
- 2-3 cups lettuce, spinach, coleslaw/cabbage mix (whatever you like!)
- 1 cup assorted fruit (I love using mandarin oranges, blueberries, sliced strawberries)
- 1/4 cup crumbled Feta cheese
- 2-3 tbs. Poppyseed dressing

Chop your fruit first, set aside. Mix your greens then add the fruit on top and dressing is last! Tastes best cold! A refreshing way to eat a lot of fruits and veggies– plus it satisfies any sugar craving!
