The Quickest, Yummiest, Garlicy-est Dinner You’ll Ever Make

In a crunch and not sure what to make for dinner tonight? You’re not the only one, believe me. After a crazy Labor Day weekend I’m struggling to figure out how to survive my work day, not to mention getting myself organized and oh yeah, I have to eat somewhere in there, too!

Sometimes we’re just in a pinch to prepare dinner and we need some easy, foolproof ideas. Well here’s one:

The Quickest Yummiest, Garlicy-est Dinner You’ll Ever Make.

Ingredients:

6 tbsp olive oil

1-2 chicken breasts cut into small pieces

1 tbsp butter

2 tbsp minced garlic

¼ onion, chopped (if you love onions like I do, do ½ the onion chopped)

1 yellow zucchini, chopped

1 small can diced tomatoes (or 2 medium-sized tomatoes, chopped)

1 tsp oregano/Italian seasoning

3 tbsp parmesan cheese (optional)

In one frying pan, sauté the small chicken pieces in 2 tbsp olive oil and 1 tbsp butter. Add salt and pepper to taste.

In another frying pan, sauté the olive oil, garlic, and veggies together. Because you have the juice from the tomatoes, it should start to create a thin, tomatoey-garlicy sauce.

On the side, create your noodles. My favorite are bowtie noodles, but you can use anything from spaghetti to gnocchi! Your choice!

Once the veggies are softened and you’ve tasted the sauce to see if anything needs to be added, (I love garlic…so I add more usually, and some salt/pepper/oregano), you can pour the sauce into the chicken frying pan and cook together. This allows the chicken to absorb the flavor! (Usually cook this for 2-3 min). Then pour the sauce over the noodles and enjoy!

To season, add parmesan cheese on top. Yum!
